Salsa Sour Cream Chicken

Original Recipe From:

4 boneless skinless chicken breasts
1 package dry taco seasoning mix 
1 cup salsa 
1/4 cup sour cream - non-fat or low-fat

  1. Place chicken in a lightly greased shallow baking dish; season with the taco seasoning mix.
  2. Pour the salsa over the chicken; bake at 350F for 35-45 minutes, or until chicken is tender. 
  3. When ready to serve, remove the chicken from the casserole, stir sour cream into salsa, then return chicken. 
  4. Serve salsa sour cream chicken and sauce with Spanish rice.
I add black beans and corn to the mix when I add in the sour cream and we usually have it over egg noodles.
